1st Commis (TAM) – Galley Crew

About the role

Handles and prepares food for service to guests and crew according to the company’s menus and recipes.

Key responsibilities

• Comply with company policy on waste separation and environmental compliance.
• Maintain quality, quantity, attractiveness and correctness of all food items prepared and served.
• Implement food handling and cleaning procedures in accordance with USPH and HACCP standards.
• Properly use, maintain and return equipment and utensils, reporting any malfunctions.
• Ensure guest satisfaction scores are met for food ratings in the assigned area.

Required profile

• 2+ years experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience in high‑volume operations of at least 100 meals per service.
• Certification from an accredited advanced food safety program.
• Degree from an accredited culinary college or university (preferred).
• Ability to read, write and speak English effectively.

Required skills

• Advanced food safety certification.
• Knowledge of VSP (Vegetable Service Procedures) preferred.
• Extensive kitchen machinery operation.
• Knife safety expertise.
• English language proficiency.
