2nd Assistant Baker (Fixed‑Term) – Cruise Galley

About the role

The 2nd Assistant Baker supports the galley team on board, preparing bakery products for passengers and crew according to company menus and recipes. This fixed‑term position operates in a high‑volume cruise environment, ensuring quality, safety and minimal waste.

Key responsibilities

• Prepare and handle bakery items following company recipes and menus.
• Comply with waste‑separation policies and aim to minimise food waste.
• Execute food handling and cleaning procedures in line with USPH and HACCP standards.
• Maintain guest satisfaction scores for food quality in the assigned area.
• Use, maintain and return equipment and utensils properly; report any malfunctions to the Chief Baker.
• Follow all guidelines and instructions from the Chief Baker.
• Maintain high productivity, cleanliness and sanitation throughout the shift.
• Perform additional duties related to health, environmental, safety and security as assigned.

Required profile

• Minimum 1 year experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience in high‑volume operations serving at least 100 meals per service.
• National Certificate in Bakery and certification from an accredited advanced food‑safety program.
• Ability to read, write and speak English fluently.
• Marlin’s Test score of at least 60.

• Food safety knowledge (USPH, HACCP).
• VSP (Vessel Sanitation Program) familiarity.
• Operation of kitchen machinery and knife safety.
