2nd Commis Pastry – HAL (CTI)

About the role

The HAL team is looking for a motivated 2nd Commis Pastry to work in the galley on the CTI vessel. You will prepare and handle pastry items for guests and crew, ensuring high quality and compliance with company standards.

Key responsibilities

• Prepare and present pastry items according to menus and recipes.
• Follow waste‑separation policies and minimize food waste.
• Maintain quality, quantity, attractiveness and correctness of all food served.
• Implement food handling and cleaning procedures in line with USPH and HACCP standards.
• Maintain and return equipment and utensils properly; report any faults to the Chef de Partie.
• Uphold personal appearance, dress code and conduct as per company rules.
• Achieve guest satisfaction scores for food ratings in the assigned area.
• Follow instructions from Chef de Partie or Chef de Cuisine and keep the work area clean and sanitary.
• Perform other related duties as assigned.

Required profile

• Minimum 2 years experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience handling high‑volume service of at least 100 meals per service.
• Certification from an accredited advanced food‑safety program.
• Fluent in reading, writing and speaking English.
• Preferred: degree from an accredited culinary college or university.

Required skills

• Advanced food‑safety certification (e.g., HACCP, USPH).
• Knowledge of VSP (preferred).
• Proficiency with kitchen machinery and knife safety.
