2nd Commis (TAM) – Galley Crew for HAL (CTI)

About the role

The 2nd Commis (TAM) works in the galley of the HAL vessel, preparing and handling food for guests and crew according to company menus and recipes. The role focuses on high‑volume service, waste minimisation, and strict food safety standards.

Key responsibilities

• Prepare and serve food in line with menus, ensuring quality, quantity, and presentation.
• Follow HACCP and USPH standards, maintaining sanitation and waste‑separation policies.
• Minimise food waste and act as an ambassador for sustainable practices.
• Maintain and report on equipment condition, returning utensils properly.
• Adhere to Chef de Partie/Chef de Cuisine instructions and company dress code.
• Achieve guest satisfaction scores for food ratings.
• Maintain productivity, cleanliness, and sanitation throughout the shift.
• Perform additional duties as assigned.

Required profile

• Minimum 2 years experience in a 5‑star hotel, cruise ship, or high‑profile restaurant.
• Experience handling at least 100 meals per service.
• Certification from an accredited advanced food‑safety program.
• Preferred degree from an accredited culinary college or university.
• Proficient in reading, writing, and speaking English.

Required skills

• Food safety certification (HACCP/USPH compliant).
• Knowledge of VSP (preferred).
• Operation of kitchen machinery.
• Knife safety techniques.
