Demi Chef de Partie (TAM) – Fixed Term – Thailand

About the role

The Holland America Line is seeking a motivated Demi Chef de Partie (TAM) to join its galley team in Thailand. You will prepare and present high‑quality dishes for guests and crew, following company menus, recipes, and strict safety standards.

Key responsibilities

• Prepare food for service in accordance with menus and recipes.
• Maintain waste‑separation and environmental compliance, minimizing food waste.
• Ensure quality, quantity, attractiveness, and correctness of all food items.
• Implement food handling and cleaning procedures that meet USPH standards and HACCP guidelines.
• Properly use, maintain, and return equipment and utensils; report any malfunctions.
• Uphold personal appearance, dress code, and conduct as per company rules.
• Achieve Guest Satisfaction Scores for food ratings in the assigned area.
• Follow instructions from the Chef de Partie or Chef de Cuisine and maintain high productivity, cleanliness, and sanitation throughout the shift.
• Perform other related duties as assigned.

Required profile

• Minimum 2 years experience in a 5‑star hotel, cruise ship, or high‑profile restaurant.
• Experience handling high‑volume service of at least 100 meals per service.
• Certification from an accredited advanced food‑safety program.
• Ability to read, write, and speak English fluently.
• Preferred: degree from an accredited culinary college or university.

• Extensive kitchen machinery operation.
• Knife safety expertise.
• Food safety certification.
