Kitchen Assistant (HAL) – Cruise Ship

About the role

The HAL Kitchen Assistant supports food preparation for guests and crew aboard a cruise ship operating from Thailand. You will work under the guidance of the Chef de Partie, ensuring meals are prepared to company standards while maintaining strict hygiene and waste‑reduction practices.

Key responsibilities

• Prepare food according to company menus and recipes.
• Follow USPH and HACCP procedures for food handling, cleaning, and sanitation.
• Separate waste and minimise food waste in line with environmental policies.
• Maintain and return equipment and utensils properly; report any faults to the Chef de Partie.
• Uphold personal appearance, dress code and conduct as per company rules.
• Contribute to Guest Satisfaction Scores for food quality in the assigned area.
• Assist with other duties, including health, safety, environmental and security tasks as assigned.

Required profile

• Good listening skills and ability to follow instructions.
• Initiative in culinary tasks and willingness to ask questions when unclear.
• Team‑player attitude.
• At least 1 year experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience handling high‑volume service of 100+ meals per service.
• Certification from an accredited advanced food‑safety program.
• Fluent in reading, writing and speaking English.

Required skills

• Food safety certification (advanced).
• Knowledge of the Vessel Sanitation Program (VSP).
• Operation of kitchen machinery.
• Knife safety and handling.
